Lovely to offer another of Brayan Alvear’s delicious co-fermented coffees and this one does not disappoint. This Caturra & Colombia variety from Avevedo in Huila has undergone an anaerobic pre-fermentation for flavour development. After de-pulping the beans, still in mucilage, they are enhanced with ground cherry and sugarcane intensifying the fermentation and sugar content. The beans are then dried in the sunlight before completing the drying process in mechanical silos.
